I decided to leave my sponge overnight; as it hadn't fermented to the point I was hoping it would. This is all part of the fun of sourdough. You have to look, listen, and smell your yeasty friends at each point of the process to determine your next move. Mine is just starting to make tiny tiny bubbles and it is day 5 for me. I have a feeling it was take a few more days.

I bought my son a clock that is backwards like that. It confuses my brain. It is hard to look at it and tell the time backwards.
