Atlantic City-Style Butter Roasted Cauliflower - I'm on Location and Can't Talk Right Now

Hello from New Jersey! I just flew into Atlantic City to cover the annual "Toast to the Coast" Food and Wine extravaganza for my American Foods site on About.com. So, while I'm playing jet-setting food journalist, here is a quick, and very delicious cauliflower video recipe I filmed before I left.

The name of the dish really has nothing to do with Atlantic City, except the trip here forced me to edit it on the plane, and since I don’t have any recording equipment with me, this video is sans voice-over. I think it will be a nice break for both of us. This is an unusual, and tremendously tasty, way to enjoy cauliflower. It's almost like discovering a new vegetable.

I will be doing a recap of the trip with film, recipes, and blog posts to match. By the way, a warm welcome to all the new visitors to the site - the cheese video was featured on Youtube, and we got almost 25,000 pageviews yesterday - a new record! Enjoy the clip!

Awesome! Just 1 thing, I liked how you narrated all the other vides. It made them a lot more easier and fun to watch. But I still love it!

Love this recipe, so darn easy. But I really missed your voice instructions. Have fun in AC but stay away from those slot machines.

Thanks! It doesn't have a name. Believe it or not, I actually composed that myself using the "GarageBand" on the Mac.

name you musical piece or the video "Hot Butter-on-Cauliflower Action"

This looks like a very tasty and simple recipe and I will definitely give it a try. (Cauliflower is a veggie they teach you to hate, in school caffeterias - but which can be made delish. I wish I remembered my mom's recipe for her famous cauliflower soup)

He's a lucky man.

The funnie part is that he was surprised that he liked it! xox Babs

Chef John, first I can't tell you how good you make me look on a regular basis. Thanks!! Could I use broccoli instead of cauliflower.

Chef John said...

Thanks! I've had roasted broc but it's not as dense as cauliflower and doesn't hold up to the heat as well. It can also get bitter if too brown. Give it a try, OR use cauliflower!

I hate this recipe. To begin with, I'm not a cauliflower fan. No one in my family is. So, I was surprised when my wife brought home a big head. It was on sale, and she couldn't resist.

So - I remembered this recipe. I grabbed a couple of pieces to sample after they came out of the oven and went back to my office. Now, for the part of the recipe I don't like. By the time I finished what I was doing, and got back to the kitchen, my thieving, no-cauliflower-eating family had chomped up all of it.

So you really should have mentioned in the video that you'll need to post a guard dog to keep the folks in your house from eating the chef's portion, because they will, without principle or conscience - it's that tasty.

Ha-ha, "thieving, no-cauliflower-eating family" describes this household. I'm going to try this today and WILL post a guard dog.

Nepenthe said...

I'm going to try this again, tonight. I know I said I would post guard dogs (3), but I think they bribed the dogs so I never got to taste it.

But that's you on the Hammond, right?

Use your words Chef John! It's not the same without your commentary. Looks delicious though!
