A Tuesday Tease: Paczki (Please do not call them Polish doughnuts!)

I just completed a rather fun assignment for About.com's Eastern European Guide, Barbara Rolek, on the Polish fried pastry "paczki." It should be airing very soon, so stay tuned. By the way, the chicken roulade video recipe I teased like 6 months ago will also be debuting soon – so a certain person can save their email!

Ahhhh, paczki! (Pronounced 'poonch-ki.)'

As we are of Polish descent, my Mother makes these for us several times each year, and they are traditionally made the day before Ash Wednesday, aka 'Fat Tuesday,' or Mardi Gras. They are delicious. I'll be interested to see your version!

In Germany we call them "Berliner" or "Krapfen".
I once made them myself, was a damn mess, and they were way too hard.

Might give it another try with your recipe.

These are quite a big deal in Chicago (where I live) ... and there's even a paczki day each year -- where you *must* eat one, bring them to work, share with friends, etc.

I can't remember if paczki day coincides with Vladimir Pulaski day or not ... but it would be fitting.

How wonderful! I'd save a dime from the money my Mom gave me to go get a chicken (had to pick a live one & wait while it was slaughtered & cleaned, then carry it home in a wicker basket - I kid you not!) and get one from the bakery, then scarf it down before I got home so she wouldn't know! What happy memories this brings. For me. Not so much for the chickens. Mmmm, paczki snack and roasted chicken dinner....

Hooray! Paczki! Just thinking about them makes me smile and conjures warm memories of busia and us kids gobbling them up as fast as she fried them. Ah, to the days when calories were burned off faster than we could ingest them. Thanks, John!

the far superior Czech version is called koblihy; they are even more advanced than the best American donuts - for example they have a light jam filling instead of hole.

Chef paczki are actually eaten on fat thursday in Poland rite before lent starts. I would know i currently live in Warsaw. and tmaynard Vladimir is the russian spelling of the name it would offend Poles. but uhh fyi its Kazimierz Pulawski if anything. and paczki is the plural. paczek is singular :)
