Looks great! Look at those sexy grill marks.
looking delectable, chef....i was wondering what the grilled halibut was placed on?
corn, white chantrelle mushooms and piquillo peppers.
MMMMMMM,...I just love halibut. I think that it is a very versatile fish!
Fish is always so hard to grill - gets stuck, hard to get perfect (diamond no less!) grill marks...I'm really looking forward to seeing how you did this!
oh no, another disappointed fan! Unfortunately it was raining, and so this video recipe will be about the mushroom base, not a grilling lesson. The keys are a hot, clean grill, with wide cast iron grates. The fish is dry and lightly oiled and you don't move the fish until it has seared for at least 3 minutes. I will hopefully film this procedure, but this wasn't the day! Sorry!
C'Mon guys, you must've known the video was about the mushroom base. I mean, Chef John doesn't usually make videos just for the halibut.(I'm glad I got that one in before you did, Chef).Scott - Boston
