A Cool Weather Rerun: Mascarpone Butternut Squash Ravioli with Brown Butter and Sage

I saw a great looking butternut squash today at the market, but for whatever reason I didn't buy it. Later in the afternoon I was checking some files on YouTube when I came across the pasta recipe below – my video for butternut squash ravioli!

There it was, mocking me and my lack of butternut squash with which to make it. So, I decided to do the next best thing and repost it. It's a great recipe and perfect for this time of year. By the way, you freakishly small wooden spoon fans will be happy to know le petit bois makes an appearance. Enjoy!

They are called mezzelune, litterally half moons.

Yes, if I didn't call them ravioli, I would have totally called them mezzelune. Maybe Hav-Ravs?

Just a quick admission. Sometimes I use a word like "ravioli," instead of "mezzelune" for SEO purposes. People are seaching as much for mezzelune recipes on google as ravioli. Same goes for words like barbecue. ;-)

Like fresh only mustier. You really need fresh sage for this recipe

These are *amazing*! The mascarpone makes it taste nice and rich, and the squash flavor come through. Everyone loved these.

You may want to try using fresh marjoram leaves instead of sage. Marjoram has a bright, astringency that won't sucker-punch you in the mouth like sage.

I had some great butternut squash ravioli the other day at a restaurant, so I came online and search for recipes. You have no idea how glad I found out foodwishes had this, because I trust every recipe you post Chef John!
