National Corned Beef Hash Day

Apparently the official National Corned Beef Hash Day is celebrated on September 27, which is as arbitrary as it is ridiculous. Everyone knows the real National Corned Beef Hash Day follows St. Patrick's Day.

If you have some leftover corned beef, you should seriously consider making the hash recipe below. There really isn’t anything like a plate of crusty corned beef hash. Topped with a perfectly poached egg, it's not only a classic breakfast (and proven hangover cure), but makes for one hell of a dinner. How did "slinging hash" become a pejorative term for cooks? I blame it on the US Army, which has the dubiously tradition of maligning perfectly good comfort food.

My brother loves Thanksgiving for the leftover turkey sandwiches. And that's totally OK. But I love St. Patrick's day for leftover corned beef hash.

Chef, If I wanted to add basil. Would I use dry or fresh and when should I add it to the dish?

Used cannned corned beef cooked with loads of slow caramalised onions and roasted red bell peppers. The onions and peppers made an amazing difference and are crucial in the case of canned corned beef which is otherwise very salty.

I know what I want for dinner tomorrow. Luckily the deli has cooked corned beef so I can just get a little for myself =P Otherwise, it might get ugly.
