Hey Chef J, this looks delicious. I don't have a top to my pan, but would aluminum foil over it (for the 1 hour simmer) work out ok?
YEs, but you'll have to add broth or water when it gets too dry.
I'm adapting this today :) Trying with country-style ribs, a slowcooker and cremini mushrooms. Already smells really good in here!
