Chef John, I made decent roasted hot wings before I found your technique. Now they are awesome. I learned to roast longer and to put part of the sauce on hot and let them sit for five before I finish saucing. Often that is a LONG five minutes. I play around with the spicing and sauces but not the basic technique.

So how many people Googled Clifton Springs after this post? I've been a fan for a while, but fell over backwards when you did the Garbage Plate video; my best friend's Dad is Charlie. Charlieburger with hot sauce!
