I always have stock on hand, and I just made some marinara. This took minutes to put together with some slice and dice. (kale, yellow squash, french green beans, farfalle and crumbled Ital sausage and carrot, celery and onion). If you want to get more veggies in your diet, this is also a good plan. Hit it with some parmesan at end. Yum. If you have dried beans, you've got to soak them, boil them, or do whatever you need to do before throwing them in the pot. Otherwise, you might wind up simmering the soup for 4 hours as you wait for the beans to tenderize!

Second, I wonder how crucial the pancetta is to this soup. At my supermarket, that stuff is made expensive ($26 per lb!!!). Maybe I could find it for a more reasonable price at an Italian grocery store, but I feel like ham or bacon would give you more bang for your buck here.

Third, this makes a ton of soup. About 4 full-meal portions or 8 pre-meal portions. If you're a single guy like me, make sure you want to be eating this soup all week before you cook it up.

Thanks, Chef John!Rob Pitingolohttps://www.blogger.com/profile/10273110931175509169noreply@blogger.comtag:blogger.com,1999:blog-7173052990851751381.post-74676912971557218222012-01-19T22:08:40.361-05:002012-01-19T22:08:40.361-05:00You can use bacon, ham, sausage, etc. anything! You can use bacon, ham, sausage, etc. anything!Chef Johnhttps://www.blogger.com/profile/15030125427840815038noreply@blogger.comtag:blogger.com,1999:blog-7173052990851751381.post-72185001837269255142012-01-19T21:54:29.163-05:002012-01-19T21:54:29.163-05:00The soup is simmering as I type this. I used Kale and a can of White Kidney beans, I had all the other ingredients. I ended up adding much more broth and the soup is doubled and still thick. Would serve at least 8. I also added a few tablespoons of tomato paste as your soup is a much deeper red than mine, yours is still deeper red.
