I left out the brown sugar because we are all very suspicious of sweetened cuisine here, and the fish sauce and seasoned rice vinegar both contain enough goddamned sugar as it is. We all agreed that the addition of the chicken was the nec plus ultra.<br /><br />Whenever I prepare a meal nowadays, I keep firmly in mind something you said recently: "Cooking is easy. Following recipes is hard." Frankly I don't find cooking a relaxing experience -- in fact I've avoided it for most of my life. But watching your videos gives me an unconquerable urge to 'go thou and do likewise,' so I turn myself inside out trying to do everything right, and so far it's been a completely successful strategy. The stress and worry always pay off in the end as long as I stick to the recipe. But I think 15 minutes in almost boiling water is a bit too much, unless the instructions on your package said so. <br />I keep mine in hot water for no more than 5-6 minutes, following the instructions, and they are just perfect. <br />Anyway, this seems like a great recipe, although I don't really like the taste of fresh cilantro.
