Definitely let it rest like Chef John said, as it's a bit liquidy once first pulled out of the oven. I paired it with a ceaser salad and the group loved it!! <br />Definitely making this again with Italian sausage! I chopped some roasted almonds in the blender just roughly, about a cup for the 9x11 pan I was using. Then I added about 1/4 cup of coconut flour, some salt, and some melted butter just enough to create the lumpy texture. I have moved from just gluten-free to grain free (boy did that do my waistline some good!) but I still want to make this dish and I do want some texture. I have had good luck with making a crumble of ground almonds, coconut flour, parmo cheese and melted butter. I think that may work for this. Eggplant also sounds good which also gives me the idea of a layer of spinach. What might be nice is to cut the breasts in half lengthwise and pound them a little. Then use the veg as a layer in between.
