It was hard to gauge the temp directly as our electric oven doesn't have graduations between 250 and 275 centigrade :-) However the joint turned out amazingly well, very tender and extremely tasty. The cooking was probably closer to medium than medium rare, but I put that down to oven variations. It worked! Obviously, the "5 mins/lb" calc had to be extended because the salt was an insulator...35 mins became 59 mins before internal temp was 118F. Otherwise, the rest went method-X to a tee. You are obviously a very smart guy, and a great teacher<br /><br />I think I am a good cook, that derives from tasting my grandmother and mothers wondering food . . . but my recipe repertoire is limited <br /><br />I don't have a lot of time, or patience to study recipes, I like something I can do in 20 ,or 30 minutes prep time and many of Chef John's recipes fill this bill<br /><br />AS an example this Christmas 2015 I was instructed to make a meat dish. I bought a Ten Pound Prime Rib and followed CJ prep guidelines magical mathematical formula<br /><br />It seemed all too easy and I was worried that the 18 people who were over my house starving to death would wind up disappointed. To the contrary the beef turned out exactly and perfectly just as CJ said it would<br /><br />The roast beef got absolutely rave reviews even from non meat eaters who were seduced by its wonderful aroma.
