In fact, this arroz con pollo recipe is the sole reason for why I bought a Dutch oven. Over the years this has been one of the dishes that has become a staple in my trusted recipe list (I've even made it with sausage instead of chicken a few times). I just wanted to say thank you. It's been in the oven now for an hour and the rice is still like little BB's. After 40 min the rice was hard and liquid gone so I added more chicken broth and put it back in. It looks delicious and smells wonderful but I'm wondering how you got it to cook in 30 mintues! Obviously I went wrong somewhere. I didn't have any tomato paste so I used tomatoes and tomato sauce and cooked it down a bit. Would that stop the rice from cooking?<br />Now I am reminded why I have pretty much stopped cooking.II'm at that age when you'd rather go out). Had the same over/under cooked rice dilema so last time I sauteed my rice in a little oil before sauteeing the vegetables. Brown rice holds up a little better too. And guess what? You can use a cut-up deli roasted chicken. Just put rice, veggies & liquids in oven for about 25 min.Then position the chicken pieces into the rice adding a little more broth if it looks like the rice and veggies are drying too quickly. By adding lots more liquid you can make a wonderful soup. I add 1/4 cup red lentils and the combination is fabulous!
