However, my wife and I have been baking pies for more than 40 years. I cut the apples (mostly Granny Smith, and, see below how to make them more soft, thinly sliced)and baby sit the baking (watching the pie cook in the oven). My wife does the pie crust and mixing the filling ingredients. The pies always get rave reviews: soft filling, wonderful flaky crust. A couple of tricks: I cut the apples into quarters (a la Chef John) but slice them into 10-12 slices per quarter (very slim) and I put foil (3 inch) all around the edges and a foil topper loosely over the top of the pie for all but that last 10 minutes of the baking. Our baking time is therefor longer; usually 75 minutes. That pie crust you were working looks amazing! If I may please I would like to offer a few tips to the comments here. <br />-To deal with a too liquidy filling, try replacing the cornstarch with 2 Tbls instant tapioca granules. Those tiny taste-neutral granules soak up the apple juice and turn into beautiful little super-soft pearls of gushy apple juice yum nestled around every piece of apple - holding the spicy liquid to the apples.<br />-To deal with a gummy bottom crust try giving up on using anything other than a metal pie pan. Try brushing egg white very lightly over the bottom crust before adding the filling.
