I have two recipes. One, slice the zuke into rounds, cover with jalapenos, then smother with grated Parmigiano Reggiano. Broil 'til golden, and a great hors d'oeuvre. The second method is to shred it, salt it, squeeze the moisture out of it, mix it with non-Chinese pine nuts or pistachios and sesame oil, then make ravioli out of it. It freezes well, too.
