I saw your blueberry muffin recipe and knew it was love at first sight!

I baked them today and they were just heavenly. I noticed that some people have said they are bland except for the blueberries, but I disagree. I don't think they're bland, but I do think that the mild flavor of the muffin itself allows the blueberries and lemon to shine.

Thank you for this recipe because it was the first baking recipe this week that has gone really well. The look and texture was great, but there was no flavor except for the berries. They tasted more like unbuttered biscuits or unsweetened pancakes, which is hard to believe considering how much salt and sugar and butter and lemon zest is in them. Surprisingly quite disappointed in these. Not enough self raising flour, added half a cup of bread flour. Not enough blue berry, added frozen mixed berries. Not enough big muffin tray, used min tray as well. It turned out great. The mini ones tasted a bit crunchy on the side. Excellent out come. My family wants me to make another batch soon. I did make a couple of changes--- dictated by what was available in my kitchen--- low fat Greek yogurt instead of sour cream and demerara sugar in lieu of white. There are two ways to measure it.

One is the "dip and sweep" method, where you "dip" your measuring cup into your flour bin, then "sweep" off the excess. This slightly compresses the flour giving you a higher weight (150g). This method is most commonly used when making yeast breads.

In just about every other baking scenario, such as with these muffins, you want to spoon the flour into the measuring cup before leveling it off. This makes it a little fluffier than the "dip and sweep" method, resulting in a lower weight (125g).

So, in short, go with 125g for this recipe.Dawn (Dawn's Recipes)http://www.dawnsrecipes.comnoreply@blogger.comtag:blogger.com,1999:blog-7173052990851751381.post-56866439491303707662012-06-18T20:11:56.577-04:002012-06-18T20:11:56.577-04:00I tried it & I love it!
