I'm not sure what you meant in the instructions.

Do I:
(A) Make the whole recipe from start to finish, including the broil in the end of 5 min, then put them in the fridge, and then broil them again the next day for 15-20 min?
OR
(B) Make them only up to the point BEFORE the broiling of 5 min, put them in fridge, and then broil them for 15-20 min the next day?

If it is the latter (B), won't it pose a food safety concern to cook them med-rare and then refrigerate for a while and then cook again? I'm just asking as I really don't know and I'm not trying to question your methods. Just need your advice. This looks amazing, as your recipes always do, and I hope that I will be able to make it! It is one time that people really pull out the stops either to impress or to share favorite family recipes. I hadn't yet decided what I would bring this year and have the added logistic of flying down to your fair city the week prior, driving up to Mendocino to kayak and end up in Portland the day before Thanksgiving. This recipe looks elegant and also easy. Question for you: We have a lot of wild mushroom varieties up here right now. Would Chantrelles go well for this dish? Seems to me like they would be nice.philogaiahttps://www.blogger.com/profile/02570156509307983353noreply@blogger.com
