I think I might have over ...I made this last night. I think I might have over cooked it a little. I can't say that the potatoes were creamy. They were a bit crumbly and the outside was not as crispy as shown in the video. But it was still amazing. I used a bone broth instead of stock. Not sure if that would make a difference. I also didn't have sprigs of thyme so I used the powdered form. I used three potatoes thinking that I would be saving a few pieces for lunch today. That did not happen. I look forward to making this again. One thing about using the bone broth is that there ended up being residue on the bottom and sides of the pan that tasted awesome. The stuff of the side was crispy and the stuff of the bottom was sticky. Both were great to put on top of the potatoes. I have wanted to try this recipe for ages. So happy I finally did. I look forward to trying more of your recipes. I had completely forgotten about Pommes Fondant and haven’t made them for at least 2 decades. I used to serve the regularly with high-end entrees, but never prepared them at home. I made 2 huge skillets of them the day I saw your video, and my wife couldn’t believe I had never made them for her all these years. And my 16-year-old grandson is now seriously addicted to them. We are vegan now, and I made them with vegan margarine and a good veggie broth. Absolutely wonderful. You Did the recipe proud, that is just as we English do it.<br />Just to put a few people straight :.. No these are Not scalloped Potatoes. I've got a heavy cast iron pan ...Great recipe! I've got a heavy cast iron pan with a tight lid, so I left it to braise on low burner instead of the oven and it turned out fine. And finished with a bit of smoked paprika.<br />For those having trouble, I highly recommend well seasoned cast iron, oil just enough to flow when you tilt the pan, and leave them alone while Malliard does its magic. Watch the bottom edge. You've got to get a robust crisping so it holds together during braise.
