This time, however, I tried something new. I couldn't find a wedge of blue cheese at the store, so I got some blue cheese crumbles and melted about 5oz of them in a pan (on low and don't forget to stir). <br /><br />I didn't let them melt all the way (I was worried about curdling the cheese), but I did melt them until they got very soft. Then I mushed as best as I could and added it to the rest of the ingredients.<br /><br />The only downside is now I don't have those neat little blue cheese zingers in the dressing, but I will add some of the larger crumbles when I make the salad.<br /><br />I have the dressing in the fridge now, but I tasted it and it tastes great! So if anyone wants to make this dressing and forgets to put the blue cheese wedge in the freezer or can't find a wedge, get the crumbles and melt them.
