Relax your hand and press halfway between your index finger knuckle and thumb joint for rare steak. Touch the tip of your pinkie finger with your thumb and press in the same place for medium/well done steak or properly cooked chicken breast. Touch your thumb to the tip of your middle finger for medium/rare steak. And boys.... don't make a fist by tucking your thumb in.
