It did however take forever to evaporate the liquid from about 7 cups of mushrooms and a whole onion. Using Arborrio rice you are correct only 10 minutes in the oven was perfect. However we always forgot to add the Parm cheese. So when we cook the recipe last time we added the cheese and I have to say that it tasted better without it. Don't get me wrong, I love Parm cheese but half a cup was too much as it becomes overwhelming and hides may of the layers of taste. There are two important keys to make sure the mushrooms don't stick to the pan. The first one is to preheat the pan and the butter before adding mushrooms. The second key is not to stir the mushrooms right away. They need to get a chance to start cooking - this will create a crust of sort and will prevent the mushrooms from sticking to the pan.
