I ask because the last time my roommate tried to deep fry using peanut oil, we unexpectedly reached its smoking point and smoked up my condo's interior (my unit only; my neighbors were unaffected). Also, I have only an electric stove instead of a gas stove and so I'm not sure how to determine what temperature to set the stove top. I had the same problem. I could see that even though some time had passed my batter was too runny. I ended up doubling my dry ingredients before it came out right. So next time I make these I will only use 1/2 cup club soda. I like the idea of allowing the onion rings to dry out first.
