Since I never use a sponge (l know my yeast is active) I missed the 1/2 cup of water to make the sponge and instead added 1 cup of water.... whoops... I had to add almost twice the amount of flour to get the consistency right.

I forgot to factor in the vey high water content of the sweet potatoes and the egg-- live and learn... since my ingrd Kent proportions were quite a bit off, my buns didn't come at that great, but they were still OK.

Next time I'll only use 100ml of water and the recipe will be much better, I'm sure.

Remember, if all else fails, follow the instructions..Anonymoushttps://www.blogger.com/profile/03244947127878331689noreply@blogger.comtag:blogger.com,1999:blog-7173052990851751381.post-19086200789750986452017-05-28T20:04:09.226-04:002017-05-28T20:04:09.226-04:00This may sound silly....but....what is AP flour? I nuked my sweet potato (1 lb 1 oz but I had 2 oz leftover) so it was drier than yours. I mashed slices up on a plate with a fork and that worked well. I ended up adding 3-4 Tbs of whey leftover from making ricotta, to boost the liquid factor. I can't wait to finish these so I can make them again !
Another Winner, Chef John!LuisaCAhttps://www.blogger.com/profile/16860186411252696839noreply@blogger.comtag:blogger.com,1999:blog-7173052990851751381.post-24383001276487737232015-08-03T13:50:11.126-04:002015-08-03T13:50:11.126-04:00Thanks for the recipe! He also said that most bread recipes use white sugar but he's opted to use honey instead as a healthier option, which it also says in the recipe. Lastly, :43 to about 1:40 in the video is dedicated to the sweet potato prep for the dough, and then you add the sweet potato to the yeast/water/flour slurry. Hope that helps!Lutheran Girlhttps://www.blogger.com/profile/02690183107318492736noreply@blogger.comtag:blogger.com,1999:blog-7173052990851751381.post-67281772409554569792015-07-19T12:26:01.631-04:002015-07-19T12:26:01.631-04:00Humm...
