So this is looking good. My first thought was if I want boneless skin on breasts I will have to do it myself! Then I read Kir's comment about thighs and I'm thinking, oh yeah. Bone in thighs. Ayep. You can quickly adjust the temperature of the pan from high (when searing the chicken) to low (reducing the sauce).<br /><br />But really it doesn't matter, use whatever you're most comfortable with.
