I'm concerned about leaving it on the countertop of my very warm kitchen since the recipe has a few dairy products. I can't make it any later as I need to pick up family members. Many thanks in advance and hope you had a wonderful thanksgiving!!NJoneshttps://www.blogger.com/profile/14594167917229463601noreply@blogger.comtag:blogger.com,1999:blog-7173052990851751381.post-8699901709423837072014-12-30T21:21:06.118-05:002014-12-30T21:21:06.118-05:00Hi Chef John!!

I also made turkey, cranberry sauce and gravy from your blog.
Thank you so much for giving me confidence in the kitchen. I have decided to host Christmas Eve dinner every year from now on. I am no longer afraid of cooking a whole turkey dinner on my own. Everyone was very impressed with me, as you can imagine. :)
Happy New Year to you and your family! I think I'm going to combine this with my usual recipe by adding a bulb of roasted garlic to the mash and taking it to our annual Christmas lunch at work. Sometimes for menu ideas for that day, most times for the learning & laughing experience. Cracks me up that you pretty much use cayenne in almost everything. I use red pepper. My wife thinks I'm nuts. I am, regardless, the red pepper always adds "a hint". I've been making this smashed potato recipe for years, but I include chopped garlic, sour cream, chives. Then, about 10 minutes into the baking, I drop about a dozen pads of room-temp butter on top and punch holes in it with a large fork. My guests & customers always ask for the recipe. They can't believe it's that easy. Thanks for your great ideas, chef. ps. your chicken piccata video changed how I make it. I've adapted it to serve crowds of people by brining it to stay moist.
