¡Feliz Cinco de Mayo!

Here's a collection of video recipes featuring fantastic food inspired by the cuisines of Central and South America. You never forget your first love, and when it comes to ethnic food it was the foods of Mexico and points south that first captured my imagination some 28 years ago, as I began eating my way across San Francisco. I realize Cinco de Mayo is a bigger deal out here in California, but no matter where you live, I hope you give some of these festive recipes a try. Enjoy!

dear chef,
I just found your blog through some videos on youtube and decided to take a good look at your webpage and it's quite awesome. I'm new on the cooking thing but I fancy many of your recipies. Congrats on that.
On the other hand I'm from México and with all respect our food is hardly considered "ethnic" nor any of your recipies mentioned there are somewhat "traditional" from México. I want to think that the use of "ethnic" was not used on a pejorative way. I want to invite you to taste and also prepare dishes like chiles en nogada, mole de olla, mole poblano and such many other dishes that will blow your mind with all the amazing tastes.

Chef John, I am a big fan of yours. I love your recipes and your sense of humor. I watch your videos over and over again, It feels like you speak like the normal person, rather than like a "chef" and that is very appreciated! That being said, I am from México, and I am still looking for the chef that gets Mexican food the way it's supposed to be, and not some interpretation to suit white people's palates. Other than Mexican food, everything you do is awesome! And I remain your biggest fan! Keep up the good work!
