I already know how to make Polenta. It's pretty easy - water, cornmeal. I like using the fine corn meal but even the rough stuff works well.
Chef how are your stainless steel counters holding up in your kitchen? They look so good and would clean up like a dream. Are they good for kneading bread and cutting out scones etc? I have my eye on half stainless steel and half marble. Cheers :-)

I made polenta for the first time in years last week (with a shrimp saltimbocca that only turned out so-so), and of course watched your older video before doing so. Turned out great the day I made it, but was even better the next day after being baked and pan-fried! I've had polenta on my brain ever since. Great minds must think alike! I can't wait for an updated video so I can tweak my techniques!
What a coincidence! The hubby and I were just discussing how we've not only never made polenta, but we've never eaten it either! Looking forward to the next post (as usual:).
