I once cooked spatchcock for a Christmas in July dinner (I live in Australia so it makes sense to be roasting in winter). My husband was horrified that spatchcocks are little baby chickens who haven't grown up yet. This didn't stop him from eating it though!
Any tips for breaking the breast bone? My weak arms seem incapable of such a feat!

Sarah, a young chicken is a Cornish Game Hen. Spatchcocking is a technique for butterflying any type of bird by cutting out its spine and flattening it so it will grill evenly. Some people spatchcock a turkey for Thanksgiving because it's actually easier to cook the whole bird that way on a grill without it drying out.

We've talked about this before. I cut everything on wood, as do most chefs and butchers. Do some research! Wood is okay!
