Merry Christmas Cookie Update

Just a quick note to say I followed a viewer's tip, and rolled the chocolate snowcap cookie dough in white granulated sugar first, before coating in the powdered sugar. I was told this would prevent the white tops from fading in brightness, and as you can see, that's exactly what happened (don't let the bad cell phone picture fool you). Thanks, anonymous YouTuber! My family traditionally cooks a ham for Christmas. I'm surprised I couldn't find a video on baked ham on your site. I'd love to see your ideas of non-traditional methods of preparing a whole baked ham.

Ok Chef John. Please help me understand why the snow caps fall.

I've made these twice now and the first time all was good except the snowy color.

This time the cookies flattened like cow patties.

All fresh ingredients except the eggs which had a Dec 5 date. I chilled the dough 24 hrs and in between trays I would put the bowl back into the fridge to keep it cool.

Would over beating the sugar and butter cause this? I may have run the kitchen aid longer than I should have.

They taste fine though not as chewy/firm as I remember.

Thanks for the response.

I gave these to my neighbors and called them chocolate, snow covered cow patties. Everyone loves them.

I will be making another batch Wednesday. Fresh eggs this time and I'll cream the egg and sugar for till the mixture is just pale in color.

I will also try the granulated sugar idea to see if the powdered sugar stays on better.

Guess you can't get pictures on from readers on this blog?
