As I joked about in the video, when it comes to leftovers, the
“add cheese and fry” system is a proven crowd pleaser, but to hedge our
bets, we’re also topping with guacamole, sour cream, and salsa. This creates
something so different from the holiday meal that you might forget where the
turkey actually came from. Depends on how much you’ve been drinking.
Regarding my comment about pre-grated cheese being coated
with saw dust – many people on YouTube thought I was joking, but this really is
true. That shredded stuff in the bag is coated in a fine cellulose dust, which
prevents the pieces of cheese from clumping together. The good news is, grating
cheese only takes a minute, and almost anyone can do it.
And if you don’t have old turkey to make these flautas with,
eventually you will have some leftover chicken, which would obviously also work. Either way, I hope you give these delicious, crispy flautas a try soon.

Ingredients for 12 large turkey flautas:
24 small, white corn tortillas
1 egg white to seal flautas, optional
1 egg white to seal flautas, optional
*1 pound cooked, shredded turkey
6 ounces shredded pepper Jack cheese, sharp cheddar, or a
combo of the two (about 2 cups)
1/3 cup chopped green onions
salt and freshly ground black pepper to taste
*I’ll assume you’re going to use one of our turkey recipes,
so your bird will be super moist, but if it isn’t, you can always add a 1/4 cup
of chicken broth to the mixture to compensate.
- Garnish with shaved cabbage, guacamole, sour cream, salsa,
and freshly chopped cilantro

Yes, and the most common source is wood pulp! Saw dust.
Those flautas are amazing! We would call them taquitos. I don't know but I was brought up that taquitos are made with corn tortillas and a flauta is made with flour tortillas. But regardless...delicious! Great way to use up that turkey. We also make taquitos de papa and I could see using left over dressing and mashed potatoes to make those. Happy Thanksgiving!
Boy I would say I would try this after thanksgiving but since I have used the chef John
Boneless turkey method there is never really any leftovers. And I want got try the
Turkey crepe rolls first. :)
I don usually have any leftover turkey since I have been using the chef John boneless turkey method. But if I do I am gonna use this and the turkey mancotti recipie. Thanks chef Jon love the videos. Hate the contradicting haters.
So flour tortillas would work then? I just happen to have 10 flour tortillas and a chicken breast in the fridge, waiting to be made into orange chicken. But this looks so much more delicious. How could breakfast get any better?

Chef John, what do you think of my Thanksgiving leftover special? It's called the Thanksgiving French Dip. What you do is get a nice hoagie or ciabatta and fill it with all the Thanksgiving leftovers. I'm talking turkey, mashed potatoes, stuffing, green bean casserole - the larger the variety of leftovers you can fit in, the better. Then - here is the part that makes it a "French Dip" - you get yourself a side of leftover gravy and dip your sandwich in it between bites. It may or may not give you heart disease, but hey, Thanksgiving is only once a year, right?

Wow...you can hardly tell I hid left overbrussel sprouts shedded up in ours tonight. Add cheese and fry it works in our house.
Made these on day three (after I made your Turkey and Gravy recipes). They were fine. Good flavors , and went down well with a few Micheladas
