While pan-frying cheese may not sound particularly healthy, as
it caramelizes, it gives up a fair amount of butter fat, which stays behind in
the pan. So, you could actually spin this technique as a new, fat-reducing hack
– unless you use that to butter the toast, which isn’t a dumb idea.
By the way, I hope you like your yolks runny, since if you
don’t, this is not going to be nearly as great. Which reminds me, why do people
not like runny yolks? What’s not to like? I hope they don’t think they’re
dangerous, because they’re not. Anyway, if you are a fan of the flow, this
fried cheese egg toast is the way to go, so I really do hope you give this a
try soon. Enjoy!
Ingredients for one Fried Cheese Egg Toast:
1 ounce grated cheddar cheese
pinch red pepper flakes
1 large egg
1 piece of toast
sliced green onions to garnish
pinch of salt
*Note: For best results, rub your non-stick pan with a few
drops of olive oil

I love runny yolks! Growing up we called them "dippy eggs".
I had to use mozza as i had no cheddar. Cheddar is better, but mozza opens the way for variations. I will try other cheeses too - I am the master of how to boast about my varieties of toast. PS I used your ciabotta bread recipe - finally nailed that by mixing with hand rather than a machine.

Just made this. I used sliced cheese, which I started to cut up to resemble shreds, then realized I was just going to have to corral it into a mass anyway. Worked great and this really hit the spot for a midnight snack. Two things: make sure your toast is nice and crisp (I did "butter" mine with the cheese grease, per your suggestion, CJ) and the green onions are by no means optional. It's a beautiful thing when I have everything on hand to make the latest CJ recipe. Very satisfying, indeed.

From the picture, I was skeptical about this recipe. I expected it to be one of your failed experiments but I could not have been more wrong. If your followers don't like this recipe they just ought to give up food altogether. Fried Cheese and egg...I never thought of this. I couldn't get the fold right. The first one busted while folding, then the second slipped under the fold and broke open when it hit the pan. Maybe, I didn't use enough cheese? Seemed like way more than an ounce. Either way, it tasted pretty good. I'll have to work at it.
On a hunch, I threw some flour on the drippings, and made a quick country gravy. Not bad. I think I'll have to fry up some cheese before browning the meat for my country gravy, tomorrow morning.
This is my go-to breakfast...with a little twist...a thick smear of mashed avocado on the toast before adding the cheese wrapped egg and a swirl of Sriracha to top it off.
