When my friends at Hungry Nation were over here filming my “Fresh Five” secret ingredients, they also forced me, under threat of severe physical injury, to do an interview called a “Meet & Eat.” I spend most of my free time thinking of ways to avoid going on camera, so I’m really never comfortable (or very good) doing these things, but since they did such a great job on the production, and took the time to put this together for me, I feel the least I can do is show it off here. I’ve also included the full Mahi Mahi Ceviche video below. Enjoy!

Chef John, you present yourself on camera so well..very natural...would not be surprised to see you in spot appearances in movies. tv...
thanks for all you have done for the layperson with FoodWishes...as a person with a visual disability, your blog and Youtube videos has opened up the opportunity for me to learn culinary skills that most likely would not be available via auditory format of a cookbook or tv food presentations as they tend to be more centered about the chef, the guests, not the science or technique of the preparation of a culinary dish...you are truly blessed...

I LOVED this! I've been watching your videos for a long time now, and I always wondered what you look like!
I love your style; easy, confident, no-nonsense. I know way too many people who think they "can't" cook, and it makes me crazy. I learned to cook with my adopted mom, whose philosophy was "a little bit of this, a little bit of that, cook it till it's done." I am passing that attitude on to my daughters.

your love of food really comes across. Regrettably this year in central Texas was not conducive to herbs, even the rosemary could not stand the 27 days of over 100 degrees and the lack of rain sealed their fate.
I thoroughly enjoyed the interview, and the Ceviche looks great, too! I agree w/ Anonymous #1's comments: I've also learned a lot from your method of teaching/cooking. As a result, I feel more confident when I attempt one of the dishes I watched you prepare. Thanks for all you do!!!

The first recipe I ever made from FW was your eggplant parm casserole. I had to bring something to a dinner party, and that video is what Google served up to me. It was a hit, and I've been watching your vids ever since. THANKS for making me look so food savvy to all my friends! (-:
