Meaty Mushroom Veggie Burger - The Least Terrible Veggie Burger Ever!

Sometimes I'll be standing at the neighborhood burger joint counter, waiting for my flame broiled, half-pound cheeseburger, when someone will step up, look over the menu, and sheepishly order the veggie burger. When this happens, I always say to myself, "you poor bastard." Now, before you get your hemp shorts all bunched up, let me explain.

This person I'm describing isn’t a vegetarian - if they were, they would have ordered the
garden burger immediately, and would not have looked so healthy. That they looked at the menu for a few minutes means, momentarily intoxicated with sirloin vapors, they thought about ordering a real beef burger. Then, listening to that little voice in their head (which sounds just like their wife's voice), they come to their senses and order the veggie burger.My empathetic feelings come from the fact that veggie burgers are usually dismally dry, flavorless discs of disappointment. Especially the ones burger joints serve just to spite their vegetarian customers. Well, things may be changing. This video recipe shows how to make a meaty, juicy, delicious meatless burger.

It's my dream that one day, someone will order this amazing mushroom burger, and a person standing next to them, waiting for their half-pound cheeseburger, will say to themselves, "you lucky bastard." Enjoy!



Ingredients:
4 tbsp olive oil, divided
1 1/2 lb mushrooms, sliced
1/2 finely chopped onion
4 cloves minced garlic
2/3 cup rolled oats
1/2 cup shredded Parmesan
3/4 cup breadcrumbs
2 eggs, beaten
1/2 tsp dried oregano
1 tsp salt
1/2 tsp black pepper

Freezer Burns and Veggie Burgers

I've been featuring some videos lately from my fellow creators on Hungry Nation, and today I'm happy to continue that by introducing Gregory Ng: The Frozen Food Master, from Freezerburns.com.

I love the concept of Freezer Burns, as Gregory takes one for the team by taste testing all sorts of frozen products so you don't have to. This episode is all about vegetable burgers, a subject near and dear to my heart, as evidenced by my post "Meaty Mushroom Veggie Burger - The Least Terrible Veggie Burger Ever!" A Hazy Gaze at a Glaze for the Lazy Days of Summer

This somewhat mysterious post is for a Pinot-glazed mushroom burger topping that will make it's official appearance as part of a sponsored recipe I'll be doing at a future date. I can give no details, except that it's a cheeseburger, and it kicks ass.

I'm not a huge fan of sloppy toppings for cheeseburgers. I don't mind beef grease dripping down my forearms, but I'm not really into chopped vegetable matter following it down my elbows. These mushrooms are a delicious exception. Plus, they're not even that messy.

The key is browning whatever fungi you happen to choose in a good amount of brown butter. Then, when you add the pinot noir, the wine will glaze the surface rather than soak into the mushrooms. The fat sort of makes the flesh wine-proof, and everybody wins.

Stay tuned for the mysterious burger post, and the next time you want to dress up a cheeseburger, give these pinot-glazed mushrooms a try. Enjoy!


Ingredients:
2 tablespoons butter
8 oz sliced mushrooms
salt and fresh ground black pepper to taste
1/4 cup lighter red wine
*also great with any number of spices and/or fresh herbs

DVD Update!

From the looks of the poll there seems to be enough interest for me to go ahead and have a 100 DVD's pressed. Please hold your order requests until tomorrow when I post the official order page. Here are some facts and figures.

The DVD is titled "Food Wish Favorites Vol. 1"
It will feature the following 12 videos, which I chose to give the recipient a wide range of techniques, styles, and one-liners.

This should serve as a great introduction to the site.
