In your Paul Smith years did you ever visit around Long Lake? I used to go canoe camping there with my dad. Really beautiful, except for the hip-deep mud portages and mosquitoes in early June.

Nice interview, Chef. It was interesting to hear how you put the video/audio together for your presentations.
As for microseasoning, I've begun adding a tiny bit of lavender to some dishes, for accent. And, I was recently talking to someone who often uses 1-2 drops of vanilla to various recipes.
