Faceless Man with Fake Old West Accent Barbecues Bologna in the Snow

I was surfing the web looking for a great barbecue video recipe to post in celebration of the start of summer, when I came across this. While it is probably bad form to goof on a fellow food blogger, I can’t help it. If David Lynch and his Grandpa ever made a cooking video, this is probably what it would look and sound like.

I don't even know where to start. This clip has it all - an affectatious voiceover, creepy rubber gloves, matching serial killer knife, a giant bologna (I really hope it's
bologna), a quasi-porn soundtrack, and…snow? Having said all that, it actually looks kind of good, and I would have totally enjoyed sharing one of those sandwiches he makes at the end of the clip. Hey, is that a wood chipper over there?

Great great find.

Now let's get serious here :
Chef, how long will I need to leave my knife outside under the back porch before it gets the kind of rust necessary to pull off this kind of cooking? I work all day and just don't have the time. Any time saving tips here?

And oh, can I substitute something else for the baloney?

I'm also allergic to mustard. Any ideas?

I can't wait to try it!

Yeah, I noticed that too Scott, I guess it was all those "layers" he was talking about. I'd love to see this guy when he gets a new CD.

BTW, BBQ mystery man - If you're reading all this stuff, feel free to post one of my video's and make fun - it won't be that hard. I could use the traffic.

I gotta say, that clip is amazing on so many levels...I went to their website to check out some more of their stuff. I do believe that if the Dukes of Hazard had the interweb back in the day...this is the stuff they'd be doing.

At the state pen they were serving them baloney sandwiches with peanut butter all the time - I think a tattooed self-respecting feller with a woodchipper should be pretty tired of the stuff.

But it may be OK to try this on a cheap whole ham, the kind of you get $1.20 a pound with the bone in.

I actually came across some of this guy's other videos once, and to add to the weird tool riff, he uses a short of weird meat hook to prick and flip his steaks in this grilled ribeye video: http://youtube.com/watch?v=vB16Dbjz8oo

Pretty weird stuff, but I guess that's how they do it better in Texas.

Although the BBQed bologna seems far fetched, the other recipes don't seem that bad. Nothing for Chef John to worry about, but some good ideas for BBQing.

What are you thoughts?

ryan, I thought you were implying the the clips were secretly sponsored by webber, so I was making a joke.

I have seen some of their clips. I encourage ALL online cooking videos. I think they do a great job, I just get a kick out of the voice over. And the whole bologna bbq is a surreal pleasure of the highest order. I hope they get lots of new fans from this post.

I do see the Miller similarities, but believe those to be coincidental.

The voice over may be cheesy but the dude is cooking with cast iron in some other vids.

We all know cast iron is the true and righteous way to make some good vittles.

Now chef John, due to your posting of this video I have spent many hours watching http://www.youtube.com/user/BarbecueWeb videos (second only to your fantastic recipes of course :-).

They did this BBQ meat loaf recipe that was just great. They basically filled a cookie sheet with ground beef, topped it with rub, crappy pre-shredded cheese, bbq sauce, and a cast iron skillet-ful of sausage, bacon, jalapenos, tomatoes, onions, mushrooms, and pineapple slices. Then they made huge, greasy burgers out of them. The best part was when they filled up the cutting board with raw veggies and used the tip of the serial killer knife to chop them all up.

Another time, they braised - in an aluminum pan filled with Kraft bbq sauce on the grill - a rack of country style ribs.
