There was such an unexpectedly large and enthusiastic response to my knife steel video yesterday, and so many questions about knife sharpening in general, I thought I'd find a video showing the proper use of a whetstone. This extremely well-done demonstration is by Ian Knauer, food editor for Gourmet Magazine. Enjoy!

Awesome! Thanks CJ! It was helpful to know that the 4 different techniques are all similar, it makes the idea of sharpening my own knives a lot less intimidating.
Thanks, John. I am about to go to culinary school (yay me!) and the one thing I am terrified of is sharpening knives. I happen to know that my kit will include a whetstone so perhaps now I will have at least a vague idea of how it works the first time I pull it out!

being sharp is extremely important... slice through the meat, dont saw through it. Same way in a machine shop.. if you're tool bits are dull the heat builds up and the cuts are never as clean. Every one should learn to sharpen knives for themselves (and those silly infomercial sharpeners dont cut it !)
