We hope she is doing well. There will be a lot of strenuous physiotherapy where she will curse her trainers (can you get a live mic on that?). Otherwise, I will refrain from (as hard as it is to do) my double entendre, puns, and snarky comments in deference to your Mom. You are such a good boy, Chef John!
Family first, Chef John. I hope "Mom" is doing better and that you are resting (mentally) in order to bring us more tantalizing recipes!
One request from an avid fan: I have always had my knives sharpened by my son, Chef Jorel, and gone so far as to make the express trip from California to Wisconsin with them for him to sharpen. How can I learn this technique so as to not have to blast across the contenent to get a sharp knife?

Love your reply on the bikini comment (ha!) and hope your Mom's recovering well. My mom had both hips done and healed great. No arthritic pain after the procedure (she suffered before) and she was waltzing around the kitchen 3 months later. Unfortunately, she's now waltzing in heaven but nothing to do with her hips.

This is how much I rely on Chef John's video. Days 1-5 of no new videos (sad). Days 6-10 (angry). Day 11 (freaking out that maybe he got hit by a car or ate too much and had a heart attack and how would all of us loyal fans find out and then googled him and finally came to the blog and now I'm releaved). I know. I need to chill
