I received an email the other day from someone wanting to
know how they can make ice cream without the machine I demonstrated in our
vanilla ice cream video. I replied that you really can’t, since it’s the churning
of the mixture while it freezes that gives you the desired texture.
Then, the very next day, I saw this video from my friend Johnathan Lynch, showing how to make a berry ice cream with no ice cream machine.
Technically it’s frozen yogurt, but still. You do need to find a food
processor, but if you can, this trick does work very well,
and as you can see, it's very fast and easy.
By the way, yes, that is Fabio Viviani making a cameo appearance! Thanks to Johnathan for sharing, and I invite you to check out his YouTube channel for more. Enjoy!

Saw a video a few weeks ago, a chef making ice cream in a ziploc bag using kosher salt between the bags, and ice, I think. couldn't find the video anywhere, but found this http://www.thekitchn.com/how-to-make-ice-26055
Like your first commenter, The Washington Post once had a recipe in the kids section describing how to make it in a similar fashion as the 1st commenter described. I've also seen it done made in a small coffee can placed inside a large coffee can.
Also, Ninja reps (of Ninja blender and food processor fame) make ice cream during their demos. They blend any ice cream base (or just milk, or just cream, or just yogurt) with frozen fruit. You have soft serve ice cream before you know it.
my daughter just watched this and reminded me - "Mom! That's how you used to make my smoothies in the morning!" ...oh. Smoothie, yogurt, ice cream, it's ALL good
If you want more of an icecream than frozen yoghurt just use cream instead.
Instant satfisfaction.
And if you want different kinds just freeze some fruit yourself.
I love banana and chocolate mix.
Not really ice-cream, it's just a really thick fruit smoothie.
Many times have done the (real!) ice-cream in small coffee can, inside of large coffee can that's filled with ice and rock-salt many times. (Use heavy duct tape to lids of both cans!)
Yes this actually works and tastes pretty good. My students and I made this using this technique last school year.
Hi Chef, please check this out - no ice cream maker http://extravirginchef.blogspot.com/2012/05/raspberry-ripple-cheesecake-ice-cream.html
OMG FABIO!!!!! I wish he would show up randomly in my kitchen while I made berry ice cream... think you can help me out Chef John?
Nice Smoothie!
This isn't ice cream! It's ICECREAMMAH!! hehe ;)
How to make ice cream.
Inner container- (quart sized ziploc bag for example works well)
In the inner container put the milk (whole milk)/cream, sugar, and vanilla extract or whatever flavoring.
Then in a bigger gallon sized bag add about 2-3 cups of ice and about a 1/2 cup to 1 cup of salt.
Making sure the inner bag is sealed, (so you don't get salty ice cream) put the inner bag into the big bag with ice and salt.
Close up the big bag and double bag if you need to. Then start shaking that bag. Gloves are recommended especially if you decide to do this with kids.
After shaking for a while you will notice that the inner bag will start to become ice cream.
This is a classic chemistry experiment.

This is one of my favorite iterations of a classic ice cream making technique, and you don't need any special tools or ingredients! Well, maybe the booze.
Chef, I think you should try it once this way for the viewers.
I did once see someone make ice cream without that kind of machine. The mother of an old school friend of mine. But instead of frozen fruit she used regular fruit, mixed it, and put it in the freezer :)
Am i the only one who didn't get the mussels video? Headline shows the picture of the cooked mussels and the "12 steps" comment, but the text and video are for the berry ice cream...
I haven't seen any problems, but the word on the street is that Blogger is no longer supporting old browsers. Do you get the same issue with other browsers or computers? I would update to latest versions and try again.
I've seen this one on 30 Minute Meals by Jamie Oliver quite a while ago... I'ts really simple, but you HAVE to use frozen fruit, otherwise it won't come out right. :/
Have to say the best part was the random Fabio appearance. But I can't wait to try the recipe either!
Yesterday I watched someone make ice cream in a stand mixer using cream/milk/egg mixture and liquid nitrogen.
It took about 30 seconds to have ice cream... and liquid nitrogen is rad!
