I'm Peruvian and have been making Peruvian turkey for decades. Always gets raves. Look forward to seeing your recipe and seeing how it compares. Never have heard of a non-Peruvian making it (or even knowing about it!)

Hey Chef John, how would I adjust the cooking time if I were using a chicken instead of a turkey? Thanks
