My Colcannon Colcraving

I’m too busy working on tomorrow’s video to make it, but I’m really craving a bowl of colcannon. This kale, leek, and potato mash is the perfect spring side dish. In addition to being great next to anything, you can heat up the leftovers with a splash of chicken broth, and turn it into an easy and memorable potato soup.
