Dark Chocolate Macarons with Bittersweet Ancho Chili Ganache from ChezUs

I've had more than a couple email requests for a macarons recipe, but I just haven't been able to do one yet.

In the meantime, it's my pleasure to bring you this fantastic recipe from my friend Denise at ChezUs, for dark chocolate macarons with bittersweet ancho chili ganache.

This was her entry in something called the Daring Bakers’ challenge, which you can read all about on her blog. You'll also find lots of yummy photos and the complete recipe should you decide to attempt these without the security blanket of a video nearby. Enjoy!

Note: not sure if you've noticed, but I've put a measurements converter widget down on the sidebar. Parts of Denise's recipe are in Metric (I know. I'll have a talk with her later), but you can easily convert them using the new tool!

both are correct, but macaron is the cooler spelling

I would sincerely love to try more US recipes, but the lack of weight measurements, whether metric or imperial, can be a huge drawback.

Macarons au chocolat! Now that's tempting!

How do you do grams of egg whites?
Why did she just say how many eggs minus the yolk.

Yes, the "french" spelling is Macaron and as Chef John says "cooler". Chef, maybe we should do a video teaching your audience how to make these lovely little morsels!

Yes, Connie, it is just over by using 3 egg whites but you really want to be right now with macarons. I use a bakers scale to measure out ingredients for baking - best investment ever!

Macarons and macaroons are completely different things, so the spelling with one "o" is correct. When I was living in Paris people would always talk about how amazing macarons were. Thinking of the American macaroons made with coconut, I blew off eating them because I'm not a big fan of macaroons. Near the end of my stay my husband and I bought a dozen macarons to finally give them a try. We were so sorry we hadn't tried them earlier because they are one of the best things I've ever eaten. Now I just need to be brave enough to try to make them. :)

I just learned how to make macaroons. Could you take a look and tell what do you think? I know, they are not perfect yet.
