In Case of Emergency: How to Make a Tomato Rose

I like to have a few short, all-purpose how-to videos, like this tomato rose technique, already done and ready for a quick upload, in case something unexpected happens and I can't film a regular recipe.

You know, for emergencies like if my equipment fails, or I get injured saving a fireman stuck in a tree (he was up there trying to save a cat), or like in this case, I get called down to Los Angeles to produce a historically-based reality food show. Enjoy!

hmm, It appears to be a nice trick, but it may not standout or mistook as some fruit if not placed properly. I'd say serve this with an appetizer?

I LOVE to make a plate of food look pretty. My theory is that if it looks beautiful and good, people will think it's good, even if it's only mediocre (my food--certainly not yours!).

Hi chef--nice video. I love little techniques like this for touches and garnishes. Please do more! You are an excellent teacher. As for you rescuing a firefighter in a tree--bravo..always help those who help us. But I have to question why he was trying to save a cat in a tree however. Did the cat call 911? Cats get into trees all the time and they can certainly get down without any problem. They don't need ladders. Cats do not need our 'rescue' efforts to get them out of a tree. Cheetahs and Mountain Lions often hang out in trees. I mean how many dead cat pelts do you see blowing in the breeze hanging from tree limbs? None cause every cat that climbed a tree got down on its own. :)

I'm not falling for this trick again, I have grim memories of nearly slicing my entire arm off trying to make that goddamned potato ball inside the cage ( despite the arterial blood, I did a good job). Rest assured though, if I do try it I'll make sure I'm good and drunk and using the sharpest knife I can find in my tool bag.

Traitor! Betraying the sneaky tricks of garde manger!

You can do the same thing with a fat radish. The red/white contrast is striking, and looks way more difficult to execute than it actually is.

I once saw a prep cook sculpt a mermaid out of cream cheese, as the centerpiece for a brunch buffet. Her hair was fresh dill, and her nipples were capers.

I'm pretty sure our chef wasn't around that morning. But the sous loved it.
